In preparation for today’s class, I discovered this article: https://www.universitybusiness.com/article/digging-sustainability I loved learning what Sterling College in Vermont is doing and about UMass’ small-plate, big-flavor mentality. I’m personally passionate about collaborative planning between chefs and farms that lead to menu driven crop planting and integrating the farm into Bard curriculum.
